Job Description

Drawing Board Kitchen is seeking a skilled and dedicated Butcher to join our kitchen team. The ideal candidate will have a strong understanding of meat preparation, cutting techniques, and food safety standards. As a Butcher, you will play a key role in ensuring the highest quality meat products are prepared and ready for service, working closely with chefs and other kitchen staff.

Key Responsibilities

• Break down, trim, and prepare various cuts of meat according to kitchen needs.
• Ensure proper handling, storage, and labeling of all meat products.
• Monitor inventory and inform the head chef of supply needs.
• Maintain high standards of hygiene and cleanliness in the butchery area.
• Follow food safety and sanitation regulations at all times.
• Work collaboratively with chefs and kitchen staff to meet production and service demands.
• Assist in receiving and inspecting deliveries of meat and other kitchen supplies.
• Contribute to maintaining portion control and minimizing food waste.

Requirements

• Previous experience as a Butcher or in a similar role is preferred.
• Knowledge of various meat cuts and butchery techniques.
• Understanding of food hygiene and safety practices.
• Ability to work efficiently in a fast-paced kitchen environment.
• Good communication skills and a team-player attitude.
• Willingness to learn and grow within a professional kitchen team.
