A prestigious 5-star luxury hotel in Qatar is seeking a skilled and experienced Chef de Partie – Butchery. This role is responsible for managing the butchery section, ensuring high-quality preparation, portioning, and presentation of meats in line with hotel standards. The ideal candidate will possess strong technical expertise, excellent product knowledge, and the ability to maintain hygiene and consistency in a fast-paced luxury kitchen environment.
Key Responsibilities:
- Manage all operations within the butchery section, ensuring quality, consistency, and presentation of all meat products
- Prepare, trim, portion, and store meat cuts according to standard recipes and hygiene guidelines
- Coordinate with the Executive Chef and Sous Chefs regarding menu planning and meat requirements
- Ensure proper stock rotation, inventory control, and minimize waste in the butchery section
- Maintain cleanliness, safety, and hygiene standards in compliance with HACCP and hotel regulations
- Supervise, mentor, and train junior kitchen staff assigned to the butchery
- Monitor equipment and report any issues or maintenance requirements
- Uphold the hotel’s luxury standards in food preparation and kitchen discipline
Qualifications, Experience & Skills:
- Diploma or certificate in Culinary Arts or a related field
- Minimum 3–4 years of experience as a Butcher or Chef de Partie – Butchery in a luxury hotel or high-end culinary establishment
- Strong knowledge of meat cuts, preparation techniques, and international standards
- Thorough understanding of hygiene and food safety standards (HACCP)
- Ability to manage time, prioritize tasks, and work efficiently under pressure
- Detail-oriented with a strong commitment to quality
- Ability to lead a small team and collaborate effectively with other kitchen sections
- Must be locally available in Qatar or able to relocate on short notice
