Job Summary:

COTHM is seeking a skilled and experienced Chef Instructor for its Rawalpindi and Islamabad Campuses, to train aspiring chefs/students through a combination of theoretical lectures and hands-on kitchen laboratory sessions. The role is bridging the gap between professional industry standards and academic learning, ensuring students graduate with the technical skills, discipline, and speed required for a modern commercial kitchen.

Key Responsibilities:

  • Leading daily kitchen "labs" covering knife skills, stocks/sauces, protein fabrication, and various international cuisines.
  • Delivering classroom-based lessons on culinary theory, nutrition, food science, and menu planning.
  • Updating course materials to include modern culinary trends, such as plant-based cooking or sustainable sourcing.
  • Conducting "blind tastings" and practical exams to grade students on flavor profile, presentation, and technique.
  • Supervising students in prep work to ensure all ingredients are ready for instruction.
  • Managing the "food cost" for each class, ensuring high-quality ingredients are ordered while staying within semester budgets.
  • Teaching and implementing strategies to minimize food waste through creative repurposing of ingredients.
  • Ensuring strict adherence to local health department regulations and food safety standards.
  • Maintaining a professional kitchen environment, enforcing standards for uniform, punctuality, and "clean-as-you-go" work habits.

Requirements:

  • Proven experience as a Chef Instructor.
  • Relevant diploma or certification in Culinary Arts (preferred).
  • Minimum qualification shall be intermediate.
  • Strong knowledge of cooking techniques and food safety standards.
  • Ability to manage kitchen operations and work under pressure.
  • Good organizational and time management skills.
  • Creative approach to menu planning and presentation.
  • Strong communication skills
