CDP – Chinese Kitchen (Job Description)
Position: Chef de Partie – Chinese Cuisine
Department: Kitchen
Reports to: Sous Chef / Head Chef
Job Summary
The CDP – Chinese Kitchen is responsible for preparing, cooking, and presenting Chinese dishes to the highest standards. The role includes maintaining recipe consistency, ensuring hygiene, managing section operations, and supporting junior staff.
Key Responsibilities
1. Food Preparation & Cooking
- Prepare and cook Chinese dishes such as stir fry, fried rice, noodles, dim sum, wok dishes, gravies, and starters.
- Follow standard recipes, portion sizes, and presentation guidelines.
- Maintain consistency in taste, flavor, and quality.
2. Section Management
- Manage assigned section (Wok, Dim Sum, Fryer, Cutting, Sauce).
- Ensure mise en place is ready before service.
- Monitor stock and inform Sous Chef of shortages.
3. Hygiene & Safety
- Follow all kitchen hygiene and food safety standards.
- Maintain cleanliness of workstation, utensils, and equipment.
- Ensure proper storage, labelling, and FIFO rotation.
4. Teamwork & Training
- Support Commis I/II/III and train them in basic Chinese cooking techniques.
- Coordinate with service staff to ensure smooth operation.
- Report issues or incidents to Sous Chef.
5. Inventory & Cost Control
- Avoid wastage; control portion and cooking losses.
- Assist in daily stock taking and requisition planning.
- Ensure proper usage of expensive ingredients like sauces, meats, and spices.

Skills & Requirements
- Minimum 2–3 years experience in Chinese/Asian kitchen.
- Strong knowledge of Chinese cooking methods: wok handling, steaming, frying, sautéing.
- Ability to work under pressure during peak hours.
- Good communication and discipline.
- Knowledge of hygiene (HACCP preferred).
