Commis Chef - Grill (Asian Cuisine)

We are seeking a motivated Commis Grill/BBQ Chef to join our Chinese cuisine team. This role focuses on supporting the preparation and cooking of grilled and barbecue dishes, ensuring authentic flavors and consistent quality while maintaining high standards of hygiene and efficiency.

Key Responsibilities

• Grill preparation: Prepare meats, seafood, and vegetables for grilling, marinating them with traditional Chinese sauces and spices.
• BBQ cooking support: Operate grill and barbecue equipment under supervision, ensuring dishes are cooked to perfection.
• Mise en place: Set up and maintain the grill/BBQ station with all necessary ingredients and tools.
• Quality control: Ensure consistency in taste, presentation, and portioning of grilled items.
• Hygiene compliance: Follow food safety standards, keep the grill area clean, and adhere to HACCP guidelines.
• Assist senior chefs: Support Demi Chef de Partie and Chef de Partie in daily grill operations.
• Stock monitoring: Track ingredient usage, report shortages, and assist in proper storage.

Skills & Competencies

• Knowledge of Chinese grilling techniques (charcoal grilling, skewers, barbecue styles).
• Ability to follow recipes and instructions accurately.
• Strong teamwork and communication skills.
• Basic understanding of food safety and hygiene practices.
• Willingness to learn and adapt in a fast-paced kitchen environment.

Qualifications

• Diploma or certification in Culinary Arts preferred.
• Prior experience in Asian or Chinese cuisine is an advantage.
• Enthusiasm for developing skills in grilling and barbecue cooking methods.
