The Commis Grill Chef assists in preparing and cooking grilled dishes within the Chinese cuisine section. This role focuses on supporting senior chefs in delivering authentic flavors, maintaining kitchen standards, and ensuring smooth operations at the grill station.
Key Responsibilities
- Grill preparation: Prepare meats, seafood, and vegetables for grilling, marinating them with traditional Chinese sauces and spices.
- Cooking support: Operate grill equipment under supervision, ensuring dishes are cooked to perfection.
- Mise en place: Set up and maintain the grill station with all necessary ingredients and tools.
- Quality control: Ensure consistency in taste, presentation, and portioning of grilled items.
- Hygiene compliance: Follow food safety standards, keep the grill area clean, and adhere to HACCP guidelines.
- Assist senior chefs: Support Demi Chef de Partie and Chef de Partie in daily grill operations.
- Stock monitoring: Track ingredient usage, report shortages, and assist in proper storage.
Skills & Competencies
- Knowledge of Chinese grilling techniques (charcoal grilling, skewers, barbecue styles).
- Ability to follow recipes and instructions accurately.
- Strong teamwork and communication skills.
