Hiring: Chinese BBQ Specialist Cook – CHUANWEI RESTAURANT
CHUANWEI RESTAURANT is searching for a highly skilled and dedicated Chinese BBQ Specialist Cook to take full ownership of our roasting and grilling station. This role requires demonstrated expertise in traditional Chinese roasting methods to maintain the authenticity and quality of our signature BBQ meats.
Key Responsibilities
- Specialized Cooking: Independently manage and operate the dedicated roasting station, specializing in the preparation and cooking of classic Chinese BBQ items
- Marinade Mastery: Prepare and blend complex, traditional Chinese marinades, rubs, and spice mixes. Ensure consistency in flavor profiles and meat tenderness across all batches.
- Quality & Consistency: Maintain strict quality control over meat texture, fat rendering, and skin crispiness, ensuring every batch meets the restaurant's premium standard.
- Equipment Operation: Expert operation and maintenance of specialized Chinese roasting ovens, smokers, and grilling equipment.
- Yield Management: Minimize waste and ensure accurate portion control and high yield on costly protein cuts.
- Safety & Hygiene: Adhere strictly to all food safety, handling, and temperature control regulations, especially concerning raw meats and roasting processes.
Required Qualifications
- Experience: Minimum of 3+ years of focused experience working specifically as a Chinese BBQ Cook (Siu Mei Chef) or Roast Chef in a high-volume Chinese or Cantonese restaurant.
- Technical Expertise: Mandatory proficiency in the entire process of preparing, curing, marinating, and roasting meat cuts and poultry.
- Knowledge of Chinese Ingredients: Understanding of specific Chinese spices, fermentation techniques, and traditional seasonings essential for authentic BBQ flavor.
- Temperature Management: Proven ability to monitor and control high heat and humidity levels within roasting ovens to achieve the desired exterior crispiness and interior juiciness.
- Physical Demands: Ability to work efficiently in a high-heat kitchen environment, handle heavy racks and roasts, and maintain professional focus under pressure.
- Communication: Clear and effective communication to coordinate workflow with the Wok Chef and prep teams.
