Key Responsibilities1. Cost Monitoring & Analysis
- Track daily food and beverage costs and compare with budget/targets
- Analyze variances and identify cost-saving opportunities
- Prepare cost reports (daily, weekly, monthly)
2. Inventory Management
- Conduct regular stock counts (daily/weekly/monthly)
- Monitor stock movement, wastage, and spoilage
- Ensure proper stock rotation (FIFO)
- Investigate discrepancies between physical and system inventory
3. Recipe & Menu Costing
- Prepare and update standard recipe costing
- Calculate food cost percentage per item
- Suggest pricing strategies based on cost and market trends
4. Procurement & Supplier Control
- Verify purchase orders, invoices, and delivery notes
- Compare supplier prices and ensure cost competitiveness
- Coordinate with procurement for best pricing and quality
5. System & Reporting (Odoo or ERP)
- Maintain accurate data in ERP system (e.g., Odoo)
- Generate inventory and cost reports from the system
- Ensure all transactions are properly recorded
6. Waste & Loss Control
- Monitor kitchen wastage and implement reduction strategies
- Identify theft, pilferage, or inefficiencies
- Recommend corrective actions
7. Compliance & Audit
- Ensure compliance with company policies and procedures
- Assist in internal and external audits
- Maintain proper documentation and records
Key Requirements
- Bachelor’s degree in Finance, Accounting, Hospitality, or related field
- 2–5 years experience in F&B cost control or similar role
- Experience in restaurants, cloud kitchen, or hotel industry
- Knowledge of ERP systems (preferably Odoo)
- Strong analytical and numerical skills
- Advanced Excel skills
- Attention to detail and strong organizational skills
