Cost Controller/Purchaser

Job Summary:

We are seeking a skilled and detail-oriented Cost Controller to oversee cost management and procurement functions for our group of restaurants. The ideal candidate will be responsible for monitoring and analyzing costs, ensuring budget compliance, supporting profitability improvement, and assisting with procurement activities. This role requires close coordination with the purchasing, operations, and finance teams to maintain cost efficiency while securing high-quality goods and services.

Key Responsibilities:

Cost Control & Analysis

  • Monitor, analyze, and control food, beverage, and operating costs across multiple restaurant units.
  • Track actual costs against budgets, identify variances, and recommend corrective actions.
  • Develop and maintain cost reporting systems, dashboards, and monthly performance reports for management.
  • Review recipes, menu costing, and portion control to ensure cost efficiency and profitability.
  • Provide recommendations for cost optimization, waste reduction, and margin improvement.

Procurement Support & Purchase Management

  • Support Purchasing Functions to evaluate suppliers, negotiate pricing, and secure cost-effective contracts.
  • Support procurement planning to ensure alignment with budget targets and operational needs.
  • Monitor market trends and supplier pricing to ensure competitive purchasing.
  • Work with inventory and store teams to track stock movement and prevent overstocking or shortages.

Compliance & Documentation

  • Ensure procurement and cost control activities comply with company policies and regulatory standards.
  • Maintain accurate records of costs, supplier contracts, invoices, and reconciliations.
  • Support finance with audits, reporting, and payment verification.

Cross-Department Coordination

  • Partner with chefs, kitchen managers, and operations to align cost control measures with menu changes, seasonal demand, and business strategy.
  • Train and support operational teams in cost awareness and control best practices.

Qualifications:

  • Bachelor’s degree in Finance, Accounting, Supply Chain Management, or a related field.
  • Minimum 4–6 years of experience in cost control and/or procurement, preferably in the F&B or hospitality industry.
  • Strong analytical, financial, and reporting skills.
  • Good knowledge of procurement processes and supplier management.
  • Familiarity with food safety and handling standards.
  • Proficiency in Microsoft Excel, accounting systems, and/or ERP software.
  • Excellent communication, negotiation, and organizational skills.
  • Ability to handle multiple tasks and meet deadlines under pressure.
