Job Summary
The Demi Chef de Partie (BBQ / Grill) is responsible for assisting in the preparation, cooking, and presentation of all grilled and barbecue items. The role supports the Chef de Partie in maintaining food quality, consistency, hygiene standards, and efficient operations within the grill section.
Key Responsibilities
Food Preparation & Cooking
· Prepare and cook BBQ and grilled items according to approved recipes and standards.
· Assist in the preparation of meats, poultry, seafood, marinades, and skewers.
· Ensure proper grilling temperatures and cooking techniques are followed.
· Monitor food quality, taste, presentation, and portion sizes.
· Prepare daily mise en place for the grill section.
Section Operations
· Support the Chef de Partie in the day-to-day operation of the BBQ section.
· Ensure all ingredients and supplies are available before service.
· Assist in maintaining smooth service during busy periods.
· Monitor stock levels and report shortages to senior chefs.
Quality Control
· Ensure all grilled items meet restaurant quality standards.
· Check the freshness and quality of all products before use.
· Maintain consistency in cooking and presentation of menu items.
· Report any equipment malfunctions or quality issues immediately.
Hygiene & Safety
· Follow HACCP and food safety regulations at all times.
· Ensure proper storage, labeling, and rotation of food products (FIFO).
· Maintain cleanliness of grills, equipment, utensils, and workstations.
· Adhere to all health and safety standards.
Team Support
· Work closely with the Chef de Partie and other kitchen team members.
· Assist Commis Chefs and Kitchen Helpers when required.
· Maintain a positive and cooperative working environment.
· Participate in training and development programs.
Requirements
· Minimum 1–3 years of experience in a BBQ, grill, or similar kitchen position.
· Experience in Lebanese, Arabic, Middle Eastern, or international grill cuisine preferred.
· Knowledge of grilling techniques, meat preparation, and food safety practices.
· Ability to work efficiently in a fast-paced environment.
· Good communication and teamwork skills.
