PURPOSE OF POSITION
Lead and supervise daily pastry production operations, ensuring consistent quality, efficient workflow, and adherence to food safety standards while mentoring junior pastry staff and supporting the shift in charge in achieving production targets.
LOCATION: ABU DHABI
KEY ROLES & RESPONSIBILITIES
- Supervise and coordinate pastry production activities and monitor and support junior staff.
- Execute advanced pastry techniques and prepare complex desserts, breads, and confectionery items
- Train and mentor junior pastry team members in techniques and food safety procedures
- Monitor product quality, portion control, and presentation standards across all pastry items
- Manage daily production schedules and ensure timely completion of orders
- Maintain HACCP compliance and UAE Municipality food safety regulations
- Control inventory levels, minimize waste, and manage ingredient costing
- Operate and maintain specialized pastry equipment including tempering machines and blast chillers
- Develop and test new recipes under Chef de Partie guidance
- Ensure proper documentation of production records and batch tracking
- Coordinate with other kitchen departments for integrated menu items
- Handle special dietary requirements and allergen management protocols

QUALIFICATIONS & EXPERIENCE
- Advanced culinary diploma in pastry arts or equivalent professional experience
- Minimum 3-5 years in pastry production with at least 1 year in supervisory role; central production or high-volume kitchen experience required
- Food Handler's Certificate, PIC certification preferred
- Advanced pastry techniques, equipment operation and maintenance, recipe development, cost control, inventory management systems, allergen management
