TITLE: Dietary Aide

JOB SUMMARY: Performs routine functions in the dietary department including preparation of portion control items for meals, residents, working tray assembly line, helping in salad and cook area if needed and performing various food preparation and cleaning activities.

PHYSICAL DEMANDS: Stands and walks most of the working day. Stoops and reaches for, lifts, and carries food and kitchen equipment. Tastes and smells food to determine quality and palatability. Must be able to lift or move 50 pounds.

SPECIAL DEMANDS: Must be genuinely interested in Senior Adults and nutrition. Must be able to work cooperatively with fellow employees. Must be a self-starter. Must be original and show initiative toward seasonings, garnishes, and presenting foods in a palatable manner. Must be mentally alert, efficient, and a safe worker. Must be able to follow standardized recipes and cycle menus. Must be able to make independent decisions as needed. Must be able to mop and clean the work areas.

EDUCATION: High school education desirable. Must be able to read, speak, and follow oral and written instructions and recipes.

JOB KNOWLEDGE: Must possess an understanding of health and safety rules for food service in a healthcare facility. Must be able to read and interpret standardized recipes for quantity cooking. Must be familiar with spices, flavoring, and herbs. Must have thorough knowledge of the cooking characteristics of all food products.

PHYSICAL DEMANDS: Works in a clean, well-lit, and well-ventilated kitchen. Must be able to tolerate temperature changes while working around stoves and ovens. Must be cautious while working with kitchen equipment to avoid cuts and burns and while working on set slippery floors to avoid falls.

WORK PERFORMED:

  • Helps prepare all foods indicated on menus.
  • Check equipment and cooking area to maintain safety and sanitation requirements. Must report ALL repairs and maintenance needs to Dietary Manager or Administrator ASAP.
  • Able to follow menus provided, making substitutions only with the consent of Administrator.
  • Set up hot and cold stations for storage and serving
  • Set up trays
  • Pours and ices teas, water, etc.
  • Prepare any food item for special diet or special events.
  • Maintain sanitation standards during food preparation.
  • Ensure tables are set and prepared for meal service.
  • Make coffee and tea.
  • Scrape, stack and wash dishes.
  • Maintain sanitation requirements during the dishwashing process.
  • Clean dishwasher.
  • Empty and clean garbage cans.
  • Wipe down kitchen cabinets and walls to maintain a clean environment.
  • Sweep and mop the kitchen floor and dining room.
  • Clean freezer and refrigerator per schedule.
  • Record freezer and refrigerator temps per schedule. Report any Temperature variances to Administrator.
  • Make a list of all food and supplies needed to meet the demands of food preparation.
  • Receive all food supplies - check for quantity and quality.
  • Bake cakes and cookies and participate in planning for special occasions such as birthdays and holidays.
  • Assist with resident care as necessary.
  • Any and all other duties as assigned.
