We are a high-volume, fast-paced cafe serving . Our menu features a variety of specialty coffee, brunch items, and desserts. We are looking for a highly skilled, innovative, and hands-on Executive Chef to lead our kitchen operations, introduce new dishes, and elevate our dessert selection with creative and high-quality offerings.
Key Responsibilities
Culinary Strategy & Brand Consistency
- Menu Engineering: Own and manage the entire menu development lifecycle, ensuring creativity, market relevance, profitability, and adherence to the COMO Lounge brand aesthetic.
- Standardization: Develop, document, and enforce comprehensive Standard Operating Procedures (SOPs) and detailed recipe manuals for all menu items across all branches, guaranteeing absolute consistency regardless of location.
- Quality Control Audits: Conduct regular, unannounced quality control audits across all branch kitchens to assess food quality, plate presentation, adherence to standards, and ingredient management.
- Product Innovation: Research regional and international culinary trends to introduce seasonal items and specials that drive sales and maintain COMO Lounge's competitive edge.
Financial Performance & Centralized Cost Control
- Group P&L Oversight: Directly manage and be accountable for the consolidated Cost of Goods Sold (COGS) across the entire COMO Lounge portfolio.
- Budgeting: Prepare and manage the annual operational and capital expenditure budgets for the combined kitchen departments.
- Central Procurement: Implement and oversee a centralized procurement strategy, negotiating bulk contracts with key suppliers to leverage group volume and secure the highest quality ingredients at the lowest cost.
- Waste Management: Develop and enforce group-wide systems for tracking, measuring, and minimizing food waste and inventory shrinkage.
Leadership, Training & Mentorship
- Team Development: Recruit, train, and directly mentor the Senior Chefs or Kitchen Managers at each branch. Conduct regular one-on-one performance reviews and establish professional development plans.
- Kitchen Discipline: Uphold and enforce the highest standards of professionalism, cleanliness, organization, and discipline in all kitchen environments.
- Hiring & Staffing: Define staffing standards and assist local management teams in recruiting and training back-of-house personnel to meet group standards.
- Work Culture: Lead by example to cultivate a positive, safe, and highly efficient kitchen culture that retains top talent.
Operational Excellence & Compliance
- HACCP & Hygiene: Ensure complete and continuous compliance with all UAE Municipality, health, safety, and hygiene regulations across all physical locations.
- Equipment Management: Oversee the preventative maintenance schedule for all critical equipment group-wide, advising on capital investment for new or replacement machinery.
- Inter-Branch Communication: Establish effective communication protocols between all branch kitchens and F&B managers to facilitate seamless execution of menu changes and operational directives.
Qualifications Required:
- Minimum of 5+ years of experience as an Executive Chef or Cluster Executive Chef managing multiple locations/outlets in a high-end, high-volume environment.
- Proven ability to drive profitability by managing a multi-unit P&L and maintaining strict control over COGS and Labor Costs.
- Exceptional leadership and communication skills, with demonstrable success in mentoring and leading other Senior Chefs/CDPs/DCDPs
- Advanced knowledge of international culinary standards and UAE food safety regulations (e.g., HACCP certification).
- Willingness to travel regularly between COMO Lounge locations within the operational region.
- Must have a valid UAE Driver's License
Preferred:
- Culinary Degree or equivalent professional certification.
- Experience in the specialty café or high-end casual dining sector.
- Proficiency in centralized inventory and POS management systems.
