F&B Cost Controller

Key Responsibilities

  • Monitor and control food, beverage, and operational costs across all outlets
  • Analyze daily inventory consumption and variances using POS and inventory systems
  • Review purchase requests, supplier invoices, and GRNs for accuracy and compliance
  • Conduct regular stock audits and reconcile physical vs. system inventory
  • Collaborate with chefs and procurement to validate recipe costing and yield
  • Prepare cost reports, variance analyses, and margin breakdowns for management
  • Benchmark supplier pricing and identify cost-saving opportunities
  • Ensure compliance with internal controls and UAE tax regulations (e.g., VAT)
  • Support budgeting and forecasting processes with accurate cost data
  • Flag anomalies, wastage, or overconsumption and recommend corrective actions

Note: Candidates should be able to utilize Oracle Micros Inventory (Oracle Cloud) and Micros Simphony POS to monitor consumption, variances, and stock movements. Previous experience with his system is a must
