Position: F&B Cost ControllerJob Summary

The F&B Cost Controller is responsible for monitoring, analyzing, and controlling food and beverage costs to ensure profitability and compliance with company standards. The role involves inventory control, cost analysis, reporting, and coordination with purchasing, stores, and kitchen teams.

Key Responsibilities

  • Monitor and control food & beverage costs in line with budget and targets
  • Calculate and analyze food cost, beverage cost, and gross profit margins
  • Review recipes, portion control, and wastage to ensure cost efficiency
  • Conduct daily, weekly, and monthly inventory counts and reconciliations
  • Verify supplier invoices, purchase orders, and delivery notes
  • Monitor stock movement, expiry dates, and FIFO compliance
  • Prepare cost reports, variance analysis, and management summaries
  • Coordinate with Executive Chef, F&B Manager, and Purchasing Department
  • Control issuance of food, beverage, and consumables from stores
  • Investigate cost discrepancies, shortages, and excess usage
  • Ensure compliance with company policies, internal controls, and audit standards
  • Support budgeting, forecasting, and menu costing exercises

Qualifications & Experience

  • Bachelor’s degree in Accounting, Finance, Hospitality, or related field
  • Minimum 4–6 years’ experience as F&B Cost Controller in hotel or restaurant operations
  • Strong knowledge of food costing, beverage costing, and inventory control
  • Experience with POS systems and inventory management software
  • Familiarity with hotel or restaurant financial procedures

Skills & Competencies

  • Strong analytical and numerical skills
  • High attention to detail and accuracy
  • Proficient in MS Excel and reporting tools
  • Good communication and coordination skills
  • Ability to work independently and under pressure
  • Strong integrity and confidentiality

Preferred (Optional)

  • Experience in multi-outlet hotel or large-scale F&B operations
  • Knowledge of HACCP and food safety standards
  • Experience in GCC / Qatar market is an advantage
