We are a premium resort property committed to maintaining high standards of food quality, cost efficiency, and operational excellence. We are seeking an experienced F&B Controller to manage food and beverage cost control, inventory management, and compliance across all resort outlets.
Key Responsibilities
- Monitor and control food and beverage costs across all outlets
- Conduct daily, weekly, and monthly inventory audits and stock reconciliations
- Analyze consumption patterns, wastage, and variance reports
- Ensure accurate recipe costing and menu engineering
- Coordinate with chefs and F&B managers to optimize portion control
- Verify supplier invoices, GRNs, and pricing agreements
- Maintain cost reports, MIS, and profitability analysis
- Implement cost control SOPs and compliance standards
- Support budgeting, forecasting, and annual audits
Required Skills & Qualifications
- Proven experience as an F&B Controller or Cost Controller in a resort or hotel
- Strong knowledge of F&B costing, inventory systems, and internal controls
- Experience with POS systems, inventory software, and Excel-based reporting
- Strong analytical and attention-to-detail skills
- Ability to work closely with operations, finance, and procurement teams
Educational Qualifications
- Degree/Diploma in Hotel Management, Costing, or Finance
- Relevant certification in cost control or hospitality finance (preferred)
