As Field Operations Project Manager, you'll play a vital role in launching new venues from construction handoff through grand opening. You’ll oversee venue readiness, implement systems for operational consistency, and lead training to ensure each opening aligns with brand standards. This role involves travel to locations across the U.S., with significant activity outside of Florida.

COMPENSATION: 65k + bonuses for each opening

RESPONSIBILITIES

  • Own venue readiness from handoff to soft/opening day, including layout, equipment installation, POS setup, and BOH organization
  • Systemize operations by establishing SOPs for service, prep, receiving, ordering, inventory management, and operational controls
  • Manage project timelines, budgets, and vendor coordination, ensuring efficient execution from preopening to postlaunch support
  • Assist with hiring and onboarding of opening teams, including staffing plans and interview coordination
  • Lead FOH and BOH training focused on service standards, menu knowledge, sanitation, safety, and guest experience
  • Ensure compliance with health, safety, alcohol service laws, and brand standards; train teams on best practices
  • Coordinate with landlord/partner teams and vendors for deliveries, services, inspections, and ongoing support
  • Drive scheduling and payroll setup, ensuring accurate timekeeping and labor compliance throughout training and beyond
  • Prepare and place opening orders, establishing pars and inventory receiving processes
  • Be onsite for all key launch events including press previews, media nights, friends & family, and grand opening; remain inmarket until the venue runs independently
  • Serve as the key liaison between Operations, Culinary, and Design to ensure continuity and a seamless postopening handoff

REQUIREMENTS

  • 3+ years of experience in hospitality, restaurant, or retail openings
  • Proven ability to manage timelines, vendors, and crossfunctional teams under tight deadlines
  • Strong problemsolving skills and comfort working independently in fastpaced environments
  • Excellent communication and organizational skills
  • Willingness and availability to travel frequently (up to 75% domestic, occasional international)
  • Experience in sushi or highconcept dining venues is a strong plus
