Peponi's is a contemporary Neapolitan-style pizza restaurant in Nairobi with a casual, lively atmosphere and a buzzing bar. We want every guest to feel at home while enjoying world-class pizza, drinks, and great vibes. We're growing fast - launching delivery, increasing our service hours, and rolling out a new Florentine-style sandwich concept - and we're assembling a team of passionate and energetic experts to bring this next chapter to life.
The Role
This is a full-time, on-site role for an F&B Manager at Peponi F&B Group in Nairobi. You'll take the day-to-day running of the business under your wing. As we grow into delivery, daytime service, and a new food concept, you'll be the person making sure standards are maintained and continuously improved, controls hold, and the systems we run on get sharper over time.
You'll lead the team on the ground, tighten production and inventory, and help us scale the systems that make Peponi's run. You'll work hand-in-hand with the Head Chef, Bar Lead, and owners to centralise production and build the systems and team we need for what's ahead.

Responsibilities
- Take full ownership of day-to-day operations across all service periods and potential new outlet
- Lead, coach, and develop the team on the ground
- Build, implement, and evaluate SOPs across every part of the operation - service, production, bar, delivery, opening and closing, inventory, the lot
- Tighten operational controls across inventory, labour, and cost of sales - and improve them as the business grows
- Centralise and standardise production processes as we scale across new concepts or locations
- Master inventory - own stock accuracy, ordering, supplier relationships, and waste reduction
- Support recruitment, onboarding, and training as the team grows
- Own the launch and ongoing operations of new revenue streams (delivery, daytime, new food concepts)
- Maintain and continuously improve quality, consistency, and service standards across every guest touchpoint
- Use the advanced analytics our system provides to build tactics and strategies - turning data on sales, labour, inventory, and guest behaviour into decisions that move the business forward
- Ensure full compliance with health, safety, hygiene, and licensing standards
Skills and Qualifications
- Proven experience as an F&B Manager, Assistant Manager, Multi-Outlet Restaurant Manager, or strong Restaurant Manager ready to step up
- Work experience in Kenya, East Africa, or an African market - you understand operating in this context
- Track record running operations in a high-volume, fast-paced restaurant or hospitality group
- Deeply systems-oriented - you think in SOPs, checklists, and processes, and you measure what matters
- Tech and AI forward - you love good tools and learn new systems quickly. We've built the best operating system and POS in the market, and want someone who'll eagerly use it's potential and drive it further
- Sharp commercial instincts - you understand P&Ls, cost controls, and how operational decisions show up in the numbers
