The Food & Beverage Manager will support the Director of Operations in achieving departmental goals through effective, day-to-day operational leadership of all F&B activities. This role ensures that all food and beverage services meet the highest quality standards, follow established SOPs, and align with guest expectations.
Key Duties & Responsibilities
- Spend approximately 75% of the time on the floor during meal periods, engaging with members, guests, corporate clients, and prospective customers.
- Oversee all F&B outlets, banqueting operations, and outdoor catering to ensure smooth service delivery, guest satisfaction, and a strong reputation in the market.
- Achieve restaurant and banquet financial goals by forecasting needs, preparing budgets, analyzing variances, implementing corrective measures, and developing revenue-enhancing strategies.
- Manage staffing requirements, payroll control, duty allocation, and training programs to ensure maximum productivity and alignment with safety and hygiene standards.
- Lead menu planning and implementation, maintain food cost targets, and support high operational performance within budgeted parameters.
- Ensure superior grooming, hygiene, and uniform standards for all staff.
- Maintain a safe, secure, and compliant working environment by enforcing QHSE procedures, health regulations, and legal guidelines.
- Ensure full adherence to HACCP, QHSE protocols, and all food hygiene requirements across F&B operations.
- Maintain cleanliness and hygiene across all food service stations and dining areas.
- Supervise F&B store operations, review daily material usage, and implement measures to prevent waste, pilferage, and damage.
- Monitor monthly inventory for restaurants and banqueting, analyze stock variances, and take appropriate action.
- Liaise with suppliers, support vendor development, negotiate improved terms, and enhance supply chain efficiency.
- Prepare and submit weekly progress and periodic operational reports in line with company requirements.
- Coordinate with HR to ensure all staff meet local municipality health and food handler regulations.
- Ensure staff compliance with company policies and SOPs; enforce disciplinary measures when needed.
- Handle daily internal and external communication professionally, following corporate communication guidelines.
- Foster strong teamwork and motivate staff by implementing welfare activities and engagement initiatives.
- Maintain positive and open communication with chefs and kitchen teams, working collaboratively in a professional manner.
- Ensure implementation and maintenance of ISO food safety standards (ISO 22000:2005, ISO 14001:2004 & OHSAS 18001:2007) within the department.
- Maintain all required food safety and HSE-related documentation up to date.
- Ensure food safety and HSE policies and objectives are consistently followed and reviewed as needed.
Qualifications Required
- Degree in Hospitality Management or a related field.
- Minimum of 8 years of experience in F&B Management or a senior F&B role within a reputable establishment.
- Strong financial acumen with proven ability to manage budgets, control costs, and maximize profitability.
- Excellent communication and interpersonal skills with the ability to build strong guest relationships.
- Demonstrated capability in managing high-profile clients and overseeing location-wide operational expenses.
