Food & Beverage Director

Discovery Dunes Golf Club is seeking an experienced Food & Beverage Director to lead and elevate our entire F&B operation, from refined dining outlets and vibrant clubhouse experiences to private events and on-course service. About the Role

As Food & Beverage Director, you will oversee the full spectrum of our F&B operations, ensuring seamless coordination between front-of-house and back-of-house teams while ensuring exceptional hospitality and memorable dining experiences for our members and their guests, reflecting the unique culture and standards of a private members club. You will be an integral part of the conceptualization and development of new amenities throughout the club. You will play a key role in driving operational excellence, profitability, innovation, and team development across all dining outlets, bars, events, and amenities.

Key Responsibilities

• Lead and coordinate all Food & Beverage operations across restaurants, bars, comfort stations, clubhouse dining, events, and on-course service.
• Develop and manage annual F&B budgets, capital planning, and cost control strategies.
• Be instrumental in the development and opening of new facilities and amenities through the club.
• Working closely with the design and development team.
• Working alongside other departmental leaders to achieve common goals and club KPI's.
• Coordinate with global Discovery team to implement food and beverage initiatives and standards.
• Partner with the Director of Culinary on menu development, pricing and profitability analysis.
• Research and development to constantly seek current trends and ways of unique integration within food and beverage.
• Design and implement events, promotions, and seasonal dining experiences.
• Maintain exceptional member and guest engagement, resolving requests or concerns promptly and professionally.
• Recruit, coach, and develop a high-performing F&B team.
• Manage staffing levels, scheduling, and labor budgets across all outlets.
• Ensure strict compliance with HACCP, food safety, health, and government regulations.
• Monitor inventory, supplier relationships, and operational resources to maintain quality and efficiency.
• Maintain a strong floor presence to always ensure the highest service standards and exceptional member experience.

What Skills & Qualifications Are Required

• Degree in Hospitality Management or related field.
• 5+ years leadership experience at a similar level in luxury hospitality.
• Experience working with international clientele and luxury service standards.
• Strong leadership and operational management skills.
• Excellent communication, team development, and organizational abilities.
• Experience managing private dining and large-scale events.
• Pre-opening experience is highly desirable.
• Strong knowledge of HACCP and food safety standards.
