Food Technologist – Protein & Functional Grains (R&D / Product Development)

Job Description

We are a food manufacturing company building a new category of protein-fortified grains designed for multiple Indian and global use cases. Our focus is on protein enrichment of broken wheat and grains while maintaining taste, texture, cook stability, and regulatory compliance.

We are looking for a hands-on Food Technologist with prior experience in protein-based or functional food products to lead formulation, testing, and validation.

Key Responsibilities

• Develop and optimize protein-fortified grain formulations (soy / whey / plant proteins)
• Ensure protein stability and retention after cooking
• Improve taste, texture, and mouthfeel across multiple recipes
• Conduct shelf-life, sensory, and basic stability testing
• Support nutrition labeling, protein claims, and compliance
• Work closely with manufacturing to ensure scale-up feasibility
• Collaborate with founders on product positioning and use-case testing

Required Experience & Skills

• Degree in Food Technology / Food Science / Food Engineering
• 3–8 years experience in:
• Protein foods
• Breakfast cereals
• Functional / fortified foods
• Nutraceutical or grain-based products
• Practical knowledge of protein fortification and dry blending
• Understanding of Indian cooking methods and consumer taste profiles
• Experience with FSSAI regulations and labeling preferred

Good to Have

• Experience with soy, whey, or plant protein isolates
• Exposure to extrusion or cereal processing
• Experience working with D2C or FMCG brands
• Prior startup or pilot-scale product development

• Open to India-based candidates
