Job Description


We are seeking a Head Baker to join Faena The Red Sea, leading our bakery operations across all dining experiences—from signature restaurants and lounges to banquets, events, and in-room dining. This role calls for a master of the craft who can blend tradition with innovation, ensuring every baked item is as memorable as the setting in which it is served.

Working closely with the Pastry Chef, Chef de Cuisine, and Executive Chef, you will bring bold ideas to life, nurture a talented team of bakers, and uphold Faena’s uncompromising standards of quality, artistry, and consistency.

Key Responsibilities

  • Lead the production of bakery items including breads, viennoiseries, laminated doughs, and specialty baked goods for all outlets.
  • Collaborate on the creation of bakery menus that celebrate seasonality, sustainability, and Faena’s identity.
  • Ensure consistency in taste, texture, portioning, and presentation across every outlet.
  • Develop, test, and refine recipes while adapting to evolving guest expectations.
  • Align bakery offerings with events, dietary requirements, and special requests, delivering with precision and creativity.
  • Supervise, train, and inspire the bakery team, fostering an inclusive and performance-driven culture.
  • Plan rosters, assign responsibilities, and monitor performance to maintain smooth workflows.
  • Conduct on-the-job training and support talent development and succession planning.
  • Manage ingredient usage, stock rotation, and inventory in line with hotel standards, ensuring accuracy and minimal waste.
  • Support cost control efforts, monitor yield, and maintain resource efficiency.
  • Report equipment needs promptly to avoid service disruptions.
  • Uphold strict hygiene, sanitation, and HACCP standards, ensuring readiness for inspections at all times.
  • Collaborate with F&B, banqueting, and events teams to ensure bakery offerings enhance the overall guest experience.
  • Represent the bakery proudly during service, maintaining a seamless connection between kitchen and guest.

Qualifications
  • Minimum 6 years’ experience in a Head Baker role within a 5-star luxury hotel or high-end bakery environment.
  • European-trained with a strong background in international hotel kitchens and exposure to global baking standards.
  • Mastery of international baking techniques, with particular expertise in breads, viennoiseries, and laminated doughs.
  • Proven leadership and team development skills with a passion for mentorship.
  • Exceptional organizational and communication skills, with the discipline to deliver consistent excellence.
