Position: Head Chef – Intercontinental Cuisine (Restaurant & Lounge)

We are seeking an experienced Head Chef specializing in Intercontinental cuisine to lead kitchen operations for a premium restaurant and lounge. The ideal candidate will have strong expertise across European, Middle Eastern, Asian, and fusion menus, with proven leadership in high-volume, high-quality F&B environments.

Key Responsibilities

  • Lead all kitchen operations (hot, cold, pastry, grill)
  • Design and develop intercontinental menus (European, Asian, Middle Eastern, Fusion)
  • Maintain highest standards of food quality, taste, presentation, and consistency
  • Manage kitchen brigade: chefs, commis, stewards, helpers
  • Implement food safety & HACCP standards
  • Control food cost, portioning, wastage, purchasing, and inventory
  • Plan seasonal menu promotions and themed cuisine nights
  • Train and mentor culinary team members
  • Coordinate with restaurant GM and F&B Director on concepts and events
  • Ensure compliance with municipality hygiene regulations
  • Oversee kitchen equipment maintenance and cleaning schedules
  • Develop SOPs for preparation, storage, and service

Required Experience & Skills

  • Minimum 8–12 years culinary experience
  • At least 3–5 years as Head Chef / Executive Chef
  • Strong background in intercontinental cuisine including:
  • Italian, French, Mediterranean
  • Asian (Japanese, Thai, Chinese, Korean)
  • Middle Eastern & Turkish fusion preferred
  • Fine dining / lounge / 5-star hotel experience is an advantage
  • Excellent leadership and team-management skills
  • Strong plating and presentation techniques
  • Knowledge of menu engineering and cost control
  • Familiar with HACCP / ISO food safety standards
  • Ability to work in a fast-paced environment

Education

  • Degree/diploma in Culinary Arts or Hospitality Management preferred

Languages

  • English required
  • Arabic or French is an added advantage
