Job Purpose
To lead and manage all kitchen operations for a Japanese restaurant concept, with a strong focus on ramen and sushi, ensuring exceptional food quality, consistency, team performance, and compliance with UAE food safety standards.
Key Responsibilities
- Lead end-to-end kitchen operations for ramen and sushi production.
- Develop and execute authentic and innovative Japanese menus.
- Ensure consistent food quality, taste, and presentation.
- Train, supervise, and evaluate kitchen team members.
- Control food cost, labor cost, and kitchen budget.
- Oversee inventory, ordering, and supplier coordination.
- Maintain strict compliance with Dubai Municipality food safety and hygiene regulations.
- Implement SOPs for kitchen operations and food preparation.
- Ensure smooth service during peak hours.
- Collaborate with management on new menu launches and promotions.
Candidate Requirements
- Minimum 5–8 years of experience in Japanese cuisine.
- Strong background in ramen broth preparation, noodle standards, and sushi techniques.
- Previous experience as Head Chef or Senior Sous Chef is preferred.
- Sound knowledge of Japanese ingredients, knife skills, and kitchen discipline.
- Strong leadership, communication, and organizational skills.
- Ability to work in a fast-paced, high-volume environment.
- Knowledge of food costing, menu engineering, and kitchen budgeting.
- HACCP / Food Safety Certification preferred.
- UAE experience preferred.
