Position: Head Chef (Fine Dining Indian Cuisine)

Starting Salary: SAR 10,000 (Full package / Live out)

Start Date: This is for a pre-opening project set to open Q4 2026

Job Role: We are seeking a visionary Head Chef to launch our high-end casual-fine dining restaurant in Riyadh. This concept blends authentic South Asian culinary heritage with refined international techniques. As a pre-opening leader, you will design the kitchen, procure equipment, engineer the menu, calculate costs, recruit the team, and establish flawless operational standards.

Duties and Responsibilities:

  • Design the back-of-house layout to maximize ergonomics and speed. Ensure a seamless operational flow between specialized stations (tandoor, hot line, pastry, plating) while strictly adhering to Riyadh Municipality and Civil Defense regulations.
  • Source and acquire high-performance commercial kitchen machinery. Balance heavy-duty traditional South Asian gear (e.g., custom clay tandoors) with modern international culinary tech (e.g., combi-ovens, precision sous-vide) within budget limits.
  • Curate a high-end casual menu that fuses authentic South Asian flavor profiles and spice chemistry with contemporary global presentation. Maintain complete authority over dish development, flavor consistency, and modern plating.Build precise recipe matrixes, yield calculations, and costing sheets.
  • Secure optimal food cost percentages (F&B metrics) and execute pricing strategies aligned with Riyadh's luxury hospitality market.Establish tight inventory controls, lean stock pars, and FIFO rotation systems.
  • Manage the supply chain for both locally sourced fresh ingredients and specialty imported South Asian spices.Recruit, interview, and build a high-caliber international kitchen brigade from scratch.
  • Implement structured training programs focused on advanced techniques, safety, and multi-station cross-training.Enforce world-class hygiene, food safety standard operating procedures (SOPs), and deep-cleaning schedules.
  • Ensure the kitchen achieves flawless compliance with Saudi Food and Drug Authority (SFDA) and HACCP standards.

Qualifications

  • Must hold a Degree, Advanced Diploma, or internationally recognized professional credential in Culinary Arts or Hospitality Management from an accredited institution.
  • Minimum of 8–10 years of progressive kitchen experience, including at least 3–5 years strictly as a Head Chef or Chef de Cuisine in luxury hotels, Michelin-starred, or high-end casual-fine dining concepts.
  • Proven track record of successfully launching new restaurant concepts, ideally within the GCC region. Must demonstrate strong familiarity with Riyadh’s local dining trends, seasonal peaks, and municipal licensing processes.

Pay: From ﷼10,000.00 per month
