Head of Production from Dairy Industry

We are hiring a Head of Production for the Dairy farm.

Hiring for a wholly-owned dairy farm and milk retailer.

Role Overview:

Job Requirements:

The operation manager will oversee the complete dairy operation from procurement and packaging to online sales, delivery logistics, and marketing execution. This role demands a hands-on professional with experience in dairy sales and distribution, capable of leading cross-functional teams and ensuring smooth daily operations. And will be accountable for the entire customer journey, operational efficiency, and business growth through strong coordination across supply chain, B2B sales, and marketing.

Key Responsibilities

1.Production Leadership & Operations:

• Lead daily dairy production including milk processing, pasteurization, fermentation, cheese production, and packaging.
• Establish and implement structured SOP-based production systems.
• Ensure consistent product quality, optimal yield, and minimal process losses.
• Plan and manage production based on demand forecasts and operational requirements.
• Maintain strict cold chain and hygiene controls across production.

2.Product Development & Innovation

• Develop and scale artisan and conventional dairy products including: Mozzarella, Burrata, Ricotta, Cream Cheese, Cheddar, and specialty cheeses Yogurt, Greek yogurt, probiotic dairy products.
• Butter, cream, and value-added dairy products
• Conduct trials and scale products from lab to commercial production.
• Improve product consistency, shelf life, texture, and quality.
• Drive innovation aligned with product premium positioning.

3.QA/QC Department Establishment and Leadership:

• Design, establish, and lead product Quality Assurance and Quality Control department.
• Develop and implement QA/QC protocols, SOPs, and quality standards.
• Establish laboratory testing capabilities and supervise lab setup.
• Recruit, train, and manage QA and QC personnel.
• Implement batch traceability, quality documentation, and product release systems.
• Ensure all products meet defined quality and safety standards before release.

4.Quality Control & Food Safety Systems:

• Establish and implement QC protocols for :Raw milk testing, In-process quality control and Finished product testing.
• Implement and maintain food safety systems including HACCP, GMP, and sanitation protocols.
• Investigate quality issues and implement corrective actions.
• Ensure full compliance with food safety and regulatory standards.

5.Hygiene, Sanitation & Plant Systems

• Establish plant-wide hygiene and sanitation systems.
• Develop and supervise CIP and cleaning protocols.
• Ensure contamination-free production environment.
• Maintain audit-ready hygiene and food safety standards.

6.Process Documentation, Traceability & Production Reconciliation:

• Establish complete production documentation systems.
• Implement batch-wise traceability from raw milk to finished product.
• Establish and oversee daily production reconciliation including:Milk input vs finished product yield, Production vs packing reconciliation, Yield monitoring and loss analysis.
• Implement structured production and quality reporting systems.
• Use reconciliation data to improve efficiency and reduce losses.

7.Team Leadership & Development

• Build and lead production, QA, QC, and product development teams.
• Train staff in dairy processing, hygiene, and quality systems.
• Establish structured departmental roles and responsibilities.
• Create a disciplined, quality-focused production culture.

8.Strategic and Operational Leadership

• Design scalable dairy production systems.
• Support expansion into new product categories.
• Improve operational efficiency, product quality, and plant performance.
• Contribute to products long-term technical and product strategy.

Required Qualifications:
Bachelors or Masters degree in: Dairy Technology, Food Science & Technology, Dairy Science, Food Engineering or related field.

Experience (Mandatory):

• Minimum 5 years of hands-on dairy production experience
• Direct experience in cheese production and milk processing
• Experience managing production operations in a dairy plant
• Experience establishing or managing QA/QC systems preferred.
• Artisan cheese experience highly preferred

• Establish scalable production systems

Preferred Candidate Background:

• Ideal candidates may have worked in roles such as:Dairy Production Manager, Cheese Production Manager, Dairy Plant Manager, Dairy Technologist &Dairy Operations Manager

• Experience with premium or artisan dairy production is highly preferred.

Other Details:
Working Days: Monday to Saturday (9:00 am to 5:pm)
Location: Karachi, Korangi
Benefit: Annual bonus, half-yearly bonus (target-based), fuel allowance, phone allowance.
