Key Responsibilities
- Floor leadership: Run assigned stations/sections; brief team on menu changes, 86’d items, allergens, and specials; allocate side duties and breaks.
- Service excellence: Ensure full sequence of service (greeting, menu presentation, order taking, coursing, table maintenance, check-back, bill presentation) is executed consistently.
- Guest relations & recovery: Anticipate needs, resolve complaints on the spot, and escalate when required; maintain a visible, professional presence on the floor.
- Sales & upselling: Drive average check via suggestive selling (starters, sides, beverages, desserts); promote specials and pairings (wine/coffee/tea).
- Menu knowledge: Maintain expert knowledge of food, beverages, allergens, ingredients, and preparation methods; coach team to the same standard.
- Order accuracy & timing: Coordinate with kitchen/bar to pace courses; monitor ticket times; ensure hot food hot/cold food cold.
- Reservations & seating: Liaise with host to manage the floor plan, waitlist, and table turns; support guest seating for VIPs and large groups.
- Cash & POS controls: Process payments, splits, discounts, and voids per policy; reconcile station cash/POS at shift end; minimize errors.
- Cleanliness & mise en place: Ensure stations, service areas, and side stations are fully set, clean, and stocked before, during, and after service.
- Training & coaching: Mentor new and junior staff, execute on-the-job training, and reinforce SOPs, grooming, and hygiene standards.
- Compliance & safety: Uphold HACCP/food-safety, alcohol service laws, and company HSE guidelines; complete checklists and logs accurately.
- Reporting: Provide shift feedback to management (guest issues, maintenance needs, stock-outs, staff performance).
