Job Summary
Coordinate banquet operations. Oversee activities of Banquet Servers, Host/Hostess, Set up Attendants and Banquet Bartenders. Oversee client satisfaction. Coordinate flow of food/service during events. Assist with banquet billing. Ensure rooms are clean and set up in a timely manner pre/post function.
Job Duties
- Prepare Captain’s report for every function.
- · Inspect BEO’s are properly setup and executed.
- Learn, maintain and teach full knowledge of banquet events; such as group name, expected attendance, type of function/requirements, order of program; special requests/arrangements, VIPs, etc. Communicate function details to staff members prior to every event.
- Coordinate food timing with kitchen staff; and service flow during events.
- Complete accurate bill according to BEO and obtain comment card/signature of host. Prepare and drop off paperwork for Night Audit.
- Learn, maintain and teach full knowledge of items on the banquet menu (knowledge includes ingredients, texture, appearance, garnish, potential allergens, cooking methods, possible substitutions, presentation, etc.) Follow ServSafe guidelines.
- Learn, maintain and teach full knowledge of beverage selections for each function; including beverage characteristics, cash bar prices, etc.
- Ensure proper recording of beverages on the system. Follow TIPS guidelines and request proper identification for alcoholic beverages. Strictly abide and enforce State liquor regulations.
- Oversee the training of new staff members, and ensure proper performance of staff members.
- Assess staffing levels for the shift and maintain appropriate coverage.
- Respond to guests and patrons’ comments. De-escalate situations and ensure service recovery actions are taking place. Follow up on issues.
- Ensure door signage is in place prior to event, and removed immediately after.
- Ensure staff completes opening and closing duties, side work, cleaning tasks, etc.
- Monitor banquet hall entrances; greet guests and visitors in a warm and attentive manner.
- Maintain appropriate floor presence. Ensure client has personal contact information for any needs throughout function.
- Maintain effective communication with staff members, managers, and other departments regarding operations.
- Ensure staff completes pre and post-function sidework and strike list. Assist, as needed.
- · Ensure food storage area remains organized, and proper storage procedures are followed.
- · Ensure adherence to FIFO procedures.
- · Minimize food waste and maximize company profitability.
- · Inspect equipment, structures or materials to ensure safe operations.
- Follow appropriate PCI procedures.
- Learn, maintain and teach knowledge of banquet/buffet equipment; and use as intended.
- Learn, maintain and teach knowledge of specific room set-up styles and seating diagrams. Assist, as needed.
- Assist with inventory, ordering and other administrative tasks.
- Ensure sufficient supplies of silverware, china, glassware for each function.
- Monitor general cleanliness of the banquet/meeting rooms and back areas; and perform or delegate tasks appropriately. Ensure rooms are properly clean and locked after functions.
- · Learn, maintain and teach awareness of safety hazards and OSHA requirements.
- Maintain confidentiality of sensitive information.
- Ensure proper interactions through attentive, courteous and efficient customer service.
- Patiently answer all inquiries of our guests, visitors, and employees and assist them in every way possible.
- Maintain regular and punctual attendance.
- Comply with all company policies and procedures.
- Assist department, as needed.

Qualifications
- Must be over 21 years old due to alcohol supervision of employees under the age of 21
- · Over two years of banquet experience; required. Hotel banquet experience; preferred.
- · Over one year of supervisory experience, required.
- · Knowledge of Delphi, Office Suite, and Aloha; preferred.
- · TIPS and/or ServSafe certifications; preferred.
- · Self-starting and outgoing personality with a pleasant disposition, and strong attention to detail.
- · Must be able to communicate in a professional manner with guests and visitors.
Physical Environment
The position performs indoors.
The position requires the ability to move about hallways, kitchens, elevators, stairs, and banquet/meeting rooms. The position will be handling hot plates, cups, and other kitchen items
The position frequently requires to move items up to 50 lbs. and requires to perform duties in a stooping, kneeling, or crawling position.
The position occasionally requires to move items up to 100 lbs.
