Job Description
As Hygiene Manager, you will be the guardian of the hotel’s food safety culture, ensuring every kitchen, restaurant, bar, and heart-of-house operation reflects the highest international standards while remaining fully compliant with Saudi Arabian regulations. You will lead HACCP implementation, champion sanitation excellence, and partner closely with Culinary, Stewarding, Engineering, and Food & Beverage teams to create a safe, compliant, and world-class environment for guests and colleagues alike.
Key Responsibilities

Lead and oversee all food safety, hygiene, sanitation, and HACCP programs across the hotel.

Ensure full compliance with Saudi Food & Drug Authority (SFDA), Municipality, Ministry of Health, and company food safety standards.

Develop, implement, and continuously improve HACCP procedures, policies, and monitoring systems across all F&B outlets and kitchens.

Conduct regular hygiene inspections, internal audits, and risk assessments across front-of-house, back-of-house, stewarding, receiving, storage, and accommodation food areas.

Monitor all Critical Control Points (CCPs) and ensure corrective actions are documented, implemented, and followed through effectively.

Lead food safety investigations relating to guest complaints, hygiene incidents, contamination risks, or non-conformities.

Maintain accurate records of temperature logs, cleaning schedules, pest control reports, chemical usage, audit findings, and training documentation.

Partner closely with Executive Chefs, Restaurant Managers, Stewarding, and Purchasing teams to ensure safe food handling and storage practices are consistently followed.

Manage supplier hygiene compliance through documentation reviews, audits, and quality assurance checks.

Coordinate and facilitate hygiene and food safety training programs for all colleagues, ensuring awareness and compliance at every level.

Ensure all kitchens, restaurants, bars, and storage facilities maintain the highest sanitation and cleanliness standards at all times.

Oversee pest control programs and collaborate with external contractors to maintain a safe and hygienic environment.

Prepare for and support all government inspections, third-party audits, and brand compliance assessments.

Deliver monthly hygiene performance reports, trend analysis, and improvement action plans to hotel leadership.

Foster a culture of accountability, operational discipline, and continuous improvement where hygiene excellence becomes part of the Faena experience.
Qualifications-
Bachelor’s degree in Food Science, Microbiology, Environmental Health, Hospitality Management, or a related field is highly advantageous.

HACCP Certification Level 3 or 4 required; additional certifications in ISO 22000, FSSC 22000, NEBOSH, or food safety systems are highly desirable.

Minimum 5 years of experience in a Hygiene Manager, HACCP Manager, or Food Safety leadership role within luxury hospitality, resorts, or high-end restaurants.

Strong knowledge of Saudi Arabian food safety regulations, SFDA requirements, Municipality standards, and international hygiene practices.

Proven experience leading audits, inspections, compliance programs, and operational trainings.

Strong leadership and team development skills with the ability to influence operational teams across multiple departments.

Excellent attention to detail, organizational ability, and analytical problem-solving skills.

Ability to work in a fast-paced luxury hospitality environment while maintaining exceptional operational standards.

Strong communication and reporting skills in English; Arabic language skills are an advantage.

Proficiency in Microsoft Office and digital compliance/audit management systems.
