· Maintain high-level of food quality and taste as per standards of the brand.
· Ensure that FIFO, stock order plan, inventories and SEP is well maintained.
· Assist with the Kitchen supervisor for staff schedule, kitchen cleaning schedule etc.
· Help manager to provide training and development for staff in kitchen procedures and productions.
· Ensure the kitchen is run in the same professional manner when the management is not nearby.
· Ensure effective daily communication with relevant departments and kitchen manager.
· To be flexible with duty hours and willing to help restaurant managers during busy hours as required.
· To comply with all company policies and procedures to ensure that all statutory regulations are observed and that the department comply with these requirements.
· Collaborates with the assigned duty supervisor, to review the requirements of the day's meals and time frames for restaurant service. Takes part in ordering and cost controlling food requisitions to avoid over production and unnecessary food wastage.
· Practices at all times HACCP and on-board sanitation and hygiene standards, in compliance with Al Ghalia excellence procedures.
· Knows and operates all equipment according to Company's standard operating procedures. Adjusts thermostat controls to regulate temperature of refrigerators, ovens, broilers, grills, roasters, steam kettles, etc.
· Organize and prepare mis en place. Measures and mixes ingredients according to recipe to prepare food products.
