Job Purpose:
The Marination Supervisor is responsible for supervising and managing all marination activities in the kitchen/production area to ensure consistent taste, quality, and food safety standards. The role requires strict adherence to recipes, hygiene, and QSR operational standards.
Key Responsibilities:
- Oversee the preparation and marination of chicken, meat, and other food items according to company recipes and standards.
- Ensure accurate measurement and mixing of marinades, spices, and seasonings.
- Supervise marination staff to ensure compliance with food safety and hygiene guidelines.
- Monitor marination times and storage conditions to maintain product quality and freshness.
- Conduct regular checks on raw material quality and report any discrepancies to the Kitchen/Procurement team.
- Ensure FIFO (First In, First Out) system is followed for all marinated products.
- Train and guide team members on marination processes and safety practices.
- Maintain daily marination records (batch details, expiry tracking, wastage, etc.).
- Coordinate with kitchen and service teams to ensure timely availability of marinated items.
- Monitor equipment and tools used in marination for cleanliness and report maintenance needs.
