The Operations Manager functions as the strategic business leader for Daikan Group's multiple dining concepts, overseeing bothDaikan RamenandDaikan Izakaya. The role is responsible for ensuring the smooth operation, financial health, team leadership, and brand representation across all venues. The ideal candidate will champion operational excellence, uphold Japanese hospitality values, and deliver an outstanding guest and employee experience while achieving commercial objectives.
Key Responsibilities
1. Multi-Site Management
- Lead day-to-day operations of both Daikan Ramen and Daikan Izakaya, ensuring consistency in food quality, service standards, hygiene, and ambience.
- Conduct regular site visits and audits to monitor operational performance and enforce brand standards.
- Recruit, onboard, train, and develop front-of-house and back-of-house teams.
- Supervise and support managers, kitchen leads, and team members to ensure effective shift coverage and team morale.
- Cultivate a performance-driven culture rooted in accountability, collaboration, and continuous improvement.
3. Customer Experience- Champion an exceptional guest journey from entrance to exit at both locations.
- Ensure teams provide knowledgeable, courteous, and authentic service aligned with Japanese "omotenashi" (hospitality) principles.
- Address and resolve customer issues promptly while tracking recurring feedback for long-term improvements.
4. Operational Efficiency- Implement systems and processes for ordering, stock control, labor scheduling, and vendor management.
- Monitor KPIs (ticket times, table turnover, labor-to-sales ratio, wastage, etc.) and use analytics to optimize operational performance.
- Introduce tools and technologies to drive efficiency and reduce overhead.
- Assist with budget planning and P&L management for both venues.
- Monitor daily sales, cost of goods sold, and labor expenses to ensure profitability.
- Oversee vendor contracts and purchasing, ensuring value without compromising on quality.
6. Compliance & Standards- Ensure strict compliance with UAE food safety, health, hygiene, and labor regulations.
- Maintain all operational licenses and documentation.
- Conduct regular audits and staff training on cleanliness and food handling protocols.
7. Brand Development & Marketing Alignment- Collaborate with creative and marketing teams on campaigns, seasonal offerings, and brand activations.
- Ensure in-venue execution of promotions aligns with brand vision and delivers customer engagement.
- Represent Daikan as a brand ambassador internally and externally.
Required Skills & Qualifications- Minimum 5 years of experience in multi-site F&B operations or restaurant management, preferably within Asian cuisine or high-volume concepts.
- Strong leadership and communication skills with a hands-on management style.
- Solid understanding of restaurant technology including POS, inventory, and scheduling systems.
- Financially literate with experience in cost control, budgeting, and P&L.
- Deep appreciation for Japanese food culture and high standards of service delivery.
Preferred Experience- Experience managing both casual and upscale dining concepts.
- Working knowledge of Japanese service etiquette, sake/bar programs, and kitchen flow.
- Proven track record of team development and operational scale-up.
