Position: Commis I – Pastry & Bakery

Department: Kitchen
Reports to: Pastry Chef / Sous Chef

Key Responsibilities:

  • Prepare, bake, and finish high-quality pastries, breads, and desserts as per standard recipes.
  • Assist in menu planning, new dessert creation, and seasonal offerings.
  • Ensure consistency in taste, presentation, and portion control.
  • Oversee daily mise-en-place and ensure production deadlines are met.
  • Guide and support Commis II & III in daily production.
  • Maintain cleanliness and hygiene standards as per HACCP/ISO requirements.
  • Monitor stock levels and report shortages to the Pastry Chef.
  • Ensure proper usage and maintenance of equipment.

Requirements:

  • Minimum 3–5 years’ experience in pastry & bakery in a hotel, catering, or production kitchen.
  • Strong knowledge of international pastries, artisan breads, and bakery techniques.
  • Ability to work under pressure and meet high-volume production targets.
  • Good communication and team-leading skills.

Position: Commis II – Pastry & Bakery

Department: Kitchen
Reports to: Commis I / Pastry Chef

Key Responsibilities:

  • Assist in preparing pastries, breads, cakes, and dessert items.
  • Follow recipes, presentation standards, and portion guidelines accurately.
  • Maintain daily mise-en-place for assigned section.
  • Support Commis I in executing bulk production.
  • Ensure cleanliness of work area and proper food handling.
  • Store ingredients properly and monitor expiry dates.
  • Assist in inventory checking and receiving supplies.

Requirements:

  • 2–3 years’ experience in pastry or bakery.
  • Knowledge of basic pastry, dough preparation, and handling of ovens/mixers.
  • Ability to follow instructions and work in a fast-paced environment.
  • Good teamwork and time-management skills.

Position: Commis III – Pastry & Bakery

Department: Kitchen
Reports to: Commis I / Commis II

Key Responsibilities:

  • Perform basic preparation tasks such as dough scaling, mixing, shaping, and baking under supervision.
  • Support senior staff in daily production tasks.
  • Maintain workstation hygiene and ensure compliance with food safety standards.
  • Assist in packaging and labelling bakery & pastry items.
  • Learn and follow standard recipes and production methods.

Requirements:

  • 0–1 year of experience OR freshers with passion for pastry and bakery.
  • Basic understanding of bakery ingredients and tools.
  • Willingness to learn, follow instructions, and work in a team.
  • Ability to work long hours and in a high-volume kitchen.
