Position Summary
The Procurement Director is responsible for developing and executing Pressed Café’s purchasing strategy across all food, beverage, packaging, and non-food categories. This leader ensures consistent product quality, cost efficiency, and supply chain reliability for both the commissary kitchen and all restaurant locations. The role requires strong negotiation skills, a deep understanding of culinary and operational needs, and the ability to support a high-growth, fast-casual brand.
Key Responsibilities
Strategic Procurement & Cost Management
- Develop and execute a company-wide procurement strategy aligned with brand standards and growth plans.
- Manage purchasing for all food, beverage, packaging, cleaning products, and operational supplies.
- Maintain margin goals by reviewing and negotiating pricing, identifying savings opportunities, and reducing cost variance.
- Implement cost controls and leverage data to support accurate forecasting and budget planning.
Vendor & Supplier Relations
- Evaluate, select, and onboard suppliers that meet quality, reliability, and cost criteria.
- Build strong long-term partnerships with vendors and distributors.
- Conduct quarterly supplier reviews and performance audits.
- Resolve product shortages, delivery issues, or vendor-related operational challenges quickly and effectively.
Commissary & Restaurant Support
- Coordinate purchasing workflows between the commissary kitchen and restaurant locations.
- Ensure consistent availability of ingredients and materials required for scratch cooking and high-volume prep.
- Build ordering systems that support production schedules, menu consistency, and operational efficiency.
- Work closely with culinary leadership on new menu items, working to source quality ingredients at an optimal cost.
Inventory, Logistics & Systems Management
- Implement and manage inventory systems to ensure accurate tracking, waste reduction, and optimized par levels.
- Oversee inbound logistics, delivery schedules, product rotation, and food safety compliance.
- Maintain vendor and item setup within POS and inventory software platforms.
- Lead troubleshooting for invoice discrepancies or supply chain disruptions.
Cross-Functional Leadership
- Partner with culinary, operations, and finance teams to support companywide initiatives.
- Communicate purchasing updates, market changes, and cost impacts to leadership and restaurant teams.
- Train managers (hands on) and commissary staff on procurement protocols and systems usage.
- Lead and mentor procurement coordinators or support staff as the department grows.
Qualifications
- 5–10 years of procurement, supply chain, or purchasing experience in restaurants, hospitality, or food manufacturing.
- Strong negotiation skills and proven cost management expertise.
- Understanding of culinary operations, scratch production, and multi-unit restaurant needs.
- Experience with inventory management software and purchasing systems.
- Highly organized, analytical, and capable of operating in a fast-growth environment.
- Excellent communication and vendor-relationship management skills.
