Organization: The Organisation Harley’s Fine Baking (https://www.harleys.com/), is a European style patisserie (premium cake selling company) created by an IIM professor to disrupt the cake and coffee market, established to spread bonafide taste of the streets of Manhattan across the world. Brought into the world from a love for baking, the desire to create a meeting place that serves delicious food with a warm rustic environment. The Organization offers a full scope of Breads, morning merchandise, cakes, baked and savoury goods. Currently the team size is of about 200+ people with more than 15 outlets across Hyderabad, along with a plan of opening 100 new outlets across Mumbai, Goa, Vijayawada, Bangalore, Chennai scaling up to 1000+ people over the next year.

Designation: Production Lead (Food Manufacturing)

Qualification: Diploma / Bachelor’s degree in Food Technology, Bakery & Confectionery, Hotel Management, Production Management, or a related discipline

Certifications: Food Safety & Hygiene Certification (FSSAI Level 2 or 3 preferred), HACCP / GMP / ISO 22000 (Preferred).

Experience: Minimum 3+ years in (bakery/patisserie/food production) operations in a centralized kitchen or manufacturing setup.

Job Profile: The Production Lead is responsible for overseeing daily bakery and patisserie production operations, ensuring adherence to quality, food safety, efficiency, and delivery timelines. This role involves leading production teams, optimizing processes, maintaining SOP compliance, and collaborating with planning, QA, and supply chain teams to support Harley’s Fine Baking’s premium product standards and growth.

Job Responsibilities:

  • Lead and supervise end-to-end production activities across bakery and patisserie lines.
  • Plan daily and weekly production schedules based on demand forecasts and dispatch plans.
  • Ensure adherence to product recipes, batch accuracy, and quality benchmarks.
  • Monitor production efficiency, yield, wastage, and downtime; implement corrective actions.
  • Enforce food safety, hygiene, and sanitation standards across the production floor.
  • Manage and mentor production staff, including bakers, assistants, and supervisors.
  • Coordinate with Quality, Supply Chain, and Warehouse teams for raw material availability.
  • Ensure proper equipment usage, preventive maintenance coordination, and safety compliance.
  • Maintain production records, batch logs, and compliance documentation.
  • Support new product trials, scale-ups, and process improvements.

Required Skills:

  • Strong knowledge of bakery & patisserie production processes
  • Hands-on experience in batch production and SOP-driven operations
  • Team leadership and shift management skills
  • Understanding of food safety standards (FSSAI, HACCP, GMP)
  • Production planning and execution capabilities
  • Quality control and wastage reduction expertise
  • Basic proficiency in production reporting and MS Excel

Desired Skills:

  • Experience in centralized kitchens or multi-outlet supply models
  • Exposure to automation or semi-automated bakery equipment

Job Types: Full-time, Permanent
