Professional Bartender

Overview

Follia is an elevated, authentic Italian fine dining destination located in Lake Forest. We are currently seeking a passionate, polished, and experienced Bartender to lead our beverage program and curate exceptional experiences for our guests. As the focal point of our bar, you will craft classic and signature cocktails, guide guests through our extensive Italian wine list, and deliver impeccable hospitality in a sophisticated, fast-paced environment.

Responsibilities:

  • Craft & Execution: Expertly prepare classic and signature cocktails, demonstrating precision, speed, and a deep understanding of flavor profiles, with a special emphasis on Italian spirits and amari.
  • Wine & Beverage Service: Guide guests through our beverage menu, providing thoughtful wine pairings and executing proper fine-dining wine service.
  • Guest Experience: Welcome guests to the bar with warm, attentive hospitality. Anticipate guest needs, handle inquiries, and seamlessly manage full-service dining at the bar.
  • Bar Maintenance: Maintain a pristine, organized, and fully stocked bar before, during, and after service. Ensure all garnishes, syrups, and mixers are prepped to standard.
  • Operations: Accurately ring in orders, manage guest tabs, and process payments using the POS system while maintaining strict cash drawer accuracy.
  • Compliance: Adhere strictly to all health, safety, and sanitation regulations, as well as responsible alcohol service standards.

Qualifications:

  • Minimum 2-3 years of bartending experience, preferably in a fine dining, upscale, or craft cocktail environment.
  • Strong foundational knowledge of classic cocktails, spirits, and proper bartending techniques.
  • A passion for—and working knowledge of—Italian wines, aperitivo culture, and digestivi is highly preferred.
  • Exceptional communication skills with the ability to "read" guests and tailor their experience accordingly.
  • Ability to remain calm, graceful, and highly organized under pressure.
  • Capable of standing for prolonged periods and the ability to lift up to 40 pounds (cases of wine, kegs, etc.).
  • Must have flexible availability, including evenings, weekends, and holidays.
  • Valid BASSET (alcohol service) and ServSafe certifications required.
