Job Description: R&D / Product Development Specialist (Bakery & Chocolate)

Location: Dubai, UAE
Salary: AED 6,000 – 8,000
Industry: Industrial Bakery / Chocolate Manufacturing (e.g., Modern Bakery, IFFCO, or similar)

Role Summary

We are looking for an R&D / Product Development Specialist with experience in bakery and chocolate/confectionery to support recipe development, process trials, and quality improvements. The role involves hands-on formulation, testing, documentation, and collaboration with production teams.

Key ResponsibilitiesProduct Development & Innovation

  • Develop and modify recipes for bakery and chocolate products such as bread, cakes, pastries, chocolate-coated items, fillings, and confectionery.
  • Conduct lab-scale trials, pilot runs and assist in full-scale production of new products.
  • Improve existing products in terms of taste, texture, shelf-life, cost efficiency, and processing stability.
  • Work with bakery and chocolate ingredients: flours, cocoa, fats, emulsifiers, improvers, toppings, coatings, etc.

Quality & Testing

  • Perform sensory evaluation, physical/chemical testing, and shelf-life studies for new and existing products.
  • Monitor raw materials and finished goods to ensure compliance with food-safety and quality standards (HACCP/GMP).
  • Maintain detailed documentation for formulations, SOPs, trial results, product specs and shelf-life reports.

Production Support

  • Support scale-up of new products from lab to production line.
  • Assist the production team in setting processing parameters to ensure consistent quality.
  • Troubleshoot product issues and help with root-cause analysis for any deviations.

Ingredient & Supplier Coordination

  • Work with procurement and suppliers on new raw materials, samples, and ingredient evaluations.
  • Ensure all raw materials meet required technical and quality standards.

Cross-Functional Collaboration

  • Coordinate with QA, Production, Procurement, and Packaging teams for smooth product development.
  • Support marketing or sales teams with product technical information when necessary.

Requirements

  • Bachelor’s degree in Food Technology, Food Science, Bakery Science, or related field.
  • 1–3 years of experience in bakery, chocolate, confectionery, or food manufacturing.
  • Understanding of bakery and chocolate ingredient functionality.
  • Knowledge of food-safety standards (HACCP, GMP, hygiene).
  • Strong analytical, documentation, and communication skills.
  • Ability to work in a fast-paced production/R&D environment.
