Key Responsibilities

  • Maintain and update the wine list in collaboration with the Assistant General Manager and Beverage Director.
  • Manage wine procurement, stock rotation, and cellar organization in line with restaurant standards.
  • Provide expert wine recommendations and pairings tailored to guests preferences and dishes.
  • Ensure all wines are served at optimal temperatures and with appropriate glassware.
  • Deliver personalized service while maximizing upselling opportunities for premium wines and beverages.
  • Conduct wine tastings, training sessions, and workshops for restaurant staff to enhance knowledge and service consistency.
  • Work closely with suppliers, distributors, and importers to source unique and exclusive labels.
  • Maintain compliance with licensing, health, and safety regulations in all beverage operations.
  • Contribute to the development of seasonal wine pairings and beverage experiences that reflect Heston Blumenthal s innovative philosophy.
