Job Summary:

The Pastry Sous Chef supports the Head Chef or Executive Pastry Chef in managing all pastry and bakery operations. This role ensures high-quality dessert production, maintains consistency, supervises the pastry team, and upholds hygiene and food safety standards.

Key Responsibilities:

1. Production & Quality Control

Prepare and oversee the production of pastries, cakes, desserts, and baked goods

Ensure consistency in taste, presentation, and portioning

Maintain high standards of product quality and freshness

2. Team Supervision

Supervise and guide pastry chefs, commis, and helpers

Provide on-the-job training and skill development

Assign daily tasks and monitor performance

3. Menu Development

Assist in creating new dessert menus and seasonal items

Innovate recipes and improve existing products

Support product development (NPD) initiatives

4. Kitchen Operations

Ensure smooth day-to-day pastry kitchen operations

Coordinate with main kitchen and service team

Manage production schedules and deadlines

5. Inventory & Cost Control

Monitor stock levels and place orders as required

Minimize wastage and control food cost

Ensure proper storage and handling of ingredients

6. Hygiene & Safety

Maintain cleanliness and organization in the pastry section

Ensure compliance with food safety standards (HACCP)

Follow company policies and UAE health regulations

Requirements:

Proven experience as Pastry Sous Chef or Senior Pastry Chef

Strong knowledge of baking techniques and dessert preparation

Leadership and team management skills

Creativity and attention to detail

Ability to work under pressure in a fast-paced environment

Culinary certification or diploma preferred

Job Type: Full-time

Ability to commute/relocate:

  • Umm al-Quwain: Reliably commute or planning to relocate before starting work (Preferred)

Experience:

  • Worked as sous chef: 3 years (Preferred)

Language:

  • Fluent English (Preferred)
