Sous Chef - Japanese Cuisine

We are Hiring For Female (Sous Chef, Commis,CDP,DCDP)

Job Purpose

To assist the Sushi Chef in the preparation, production, and presentation of high-quality sushi dishes while maintaining exceptional standards of hygiene, consistency, and food quality. The role supports the smooth daily operation of the sushi section and contributes to delivering an outstanding dining experience at 3 Fils.

Key ResponsibilitiesFood Preparation & Production

• Assist in preparing sushi ingredients including rice, fish, vegetables, and condiments.
• Support in producing basic sushi items such as maki rolls, nigiri, and sashimi under supervision.
• Follow standardized recipes, portion controls, and presentation guidelines.
• Ensure all mise-en-place is prepared accurately and on time for service.

Operational Support

• Maintain cleanliness and organization of the sushi section at all times.
• Assist in receiving, labeling, and storing raw materials in accordance with FIFO procedures.
• Ensure safe handling and proper maintenance of knives, tools, and kitchen equipment.
• Support kitchen operations efficiently during peak service periods.

Health, Safety & Hygiene

• Strict adherence to food safety, hygiene, and HACCP standards.
• Ensure proper labeling, storage, and stock rotation at all times.
• Maintain excellent personal hygiene and professional grooming standards.

Teamwork & Communication

• Work closely with the Sushi Chef and kitchen team to ensure smooth daily workflow.
• Communicate promptly regarding ingredient shortages or equipment issues.
• Support colleagues during busy periods as required.

Qualifications & Skills

• Minimum 1 year of kitchen experience (previous sushi experience is an advantage).
• Basic knife-handling skills are essential.
• Knowledge of Japanese ingredients and sushi fundamentals is a plus.
• Ability to work under pressure and follow instructions precisely.
• Positive attitude, strong teamwork skills, and willingness to learn.

Physical Requirements

• Ability to stand for extended working hours.
• Ability to safely handle sharp tools and perform repetitive preparation tasks.
