Sushi Chef

Job Summary:

We are seeking a highly skilled and passionate Sushi Chef to join our culinary team. You will be responsible for preparing and presenting high-quality sushi and sashimi dishes with precision, consistency, and attention to flavor, hygiene, and artistry. This role requires deep expertise in Japanese ingredients, knife skills, and a keen eye for detail. The ideal candidate is both technically strong and creative, able to deliver traditional sushi as well as signature or fusion items tailored to our restaurant’s identity.

Key Responsibilities:

• Prepare and present a variety of sushi items including nigiri, sashimi, maki, uramaki, temaki, and specialty rolls.
• Ensure all seafood is handled, stored, and prepared in accordance with strict hygiene and food safety standards.
• Maintain the sushi station, including mise en place, cleanliness, and equipment.
• Monitor and maintain the freshness and quality of fish and other perishable ingredients.
• Collaborate with the Head Chef on menu development, specials, and seasonal offerings.
• Uphold consistent portioning, knife work, rice seasoning, and garnishing for every dish.
• Interact with guests when required (especially at sushi counters or live stations), explaining ingredients and making recommendations.
• Train and guide junior staff or apprentices in sushi techniques and hygiene practices.
• Manage stock rotation and contribute to ordering based on par levels and menu planning.
• Keep up with evolving sushi trends and integrate modern techniques or presentation styles when appropriate.

Requirements

• Minimum 3–5 years of experience as a Sushi Chef in a reputable Japanese or fine-dining establishment.

• Exceptional knife skills and deep understanding of raw fish handling and butchery.
• Strong knowledge of sushi rice preparation, seasoning, and texture control.
• Experience in maintaining HACCP standards and raw ingredient hygiene.
• Aesthetic eye for plating, color, and sushi artistry.
• High level of discipline, organization, and cleanliness.
• Strong communication skills and a team-oriented attitude.
• Ability to work in a fast-paced, high-pressure environment.
• Flexible availability for shifts, including evenings, weekends, and holidays.
