The Tandoor Chef is responsible for preparing and cooking tandoor-based dishes using a traditional clay oven (tandoor). The role requires expertise in marination, dough preparation, temperature control, food safety, and consistent quality while maintaining cleanliness and efficiency during service.
Key ResponsibilitiesTandoor Operations & Cooking
- Prepare and cook tandoor items such as naan, roti, kulcha, tandoori chicken, kebabs, fish, and vegetables.
- Operate and manage the tandoor oven, including temperature control and fuel handling.
- Ensure proper marination, skewering, and cooking techniques.
- Maintain consistency in taste, texture, and presentation.
Preparation & Mise en Place
- Prepare dough, marinades, and pre-service ingredients as per recipes.
- Ensure all tandoor items are ready before service hours.
- Follow portion control and standard recipes.
Quality, Hygiene & Safety
- Follow food safety, hygiene, and sanitation standards (HACCP or local regulations).
- Maintain cleanliness of the tandoor area, utensils, and storage spaces.
- Ensure safe handling of raw meat, poultry, and seafood.
- Monitor food freshness and discard expired or spoiled items.
Equipment & Maintenance
- Clean and maintain the tandoor oven and related tools daily.
- Ensure safe usage of charcoal, gas, or electric tandoor systems.
- Report equipment damage or safety issues to the supervisor.
Inventory & Cost Control
- Monitor stock levels of tandoor ingredients and supplies.
- Minimize food wastage and follow cost-control guidelines.
- Inform management of low stock or quality issues.
Team Coordination
- Work closely with kitchen staff and service team during peak hours.
- Follow instructions from the Head Chef or Kitchen Manager.
- Assist other kitchen sections when required.
Skills & Requirements
- Proven experience as a Tandoor Chef.
- Strong knowledge of tandoor cooking techniques and temperature management.
- Understanding of food safety and hygiene practices.
- Ability to work under pressure in a fast-paced kitchen.
- Physically fit to work in high-heat conditions.
- Good teamwork and communication skills.
Preferred Qualifications
- Culinary training or certification (preferred but not mandatory).
- Experience in Indian / Pakistani / Arabic tandoor cuisine.
- HACCP or food safety certification.
Working Conditions
- Shift-based role, including weekends and holidays.
- Exposure to high heat, smoke, and standing for long hours.
