Role Overview:
As a butcher, you will be responsible for preparing, and cutting high-quality meats that are used in the preparation of meals. You will work closely with kitchen staff to ensure the freshest cuts and adhere to strict hygiene and food safety standards.
Key Responsibilities:
· Meat Preparation: Cut, trim, bone, and portion meats according to the needs and preferences. Prepare specialized cuts for specific dishes or menus.
· Inventory: Keep track of stock and ensure the proper storage and rotation of products.
· Quality Control: Inspect meats upon delivery for quality and freshness. Ensure meat is handled properly to maintain optimal taste and texture.
· Hygiene and Food Safety: Adhere to food safety regulations. Maintain a clean and sanitary workspace, equipment, and storage areas. Ensure compliance with all food handling procedures.
· Collaboration: Coordinate with kitchen staff and chefs to understand meat requirements for the preparation of dishes and special menu items.
· Maintain Equipment: Regularly clean, sharpen, and maintain butcher knives, saws, and other equipment. Report any maintenance issues.
· Waste Reduction: Ensure efficient use of resources and minimize waste by effectively utilizing all parts of the meat.
Experience:
· Proven experience as a butcher, in an F&B environment.
· Strong knowledge of meat cuts, boning, and butchering techniques.
· Experience working with a wide variety of meats, including beef, poultry, and specialty meats.
· Good understanding of food safety standards and handling procedures.
Skills:
· Ability to work under pressure in a fast-paced environment.
· Strong attention to detail and commitment to quality.
· Good communication and interpersonal skills to collaborate with chefs and team.
· Ability to handle and maintain sharp tools and equipment safely.
· Flexibility and willingness to adapt to changing kitchen demands and menu requirements.
