Chef de Partie – Bakery (Station Lead)

At [The One Cafe], the bakery is the heart of our brand. We are looking for a skilled and disciplined Chef de Partie (Bakery) to lead our daily production. You will be responsible for executing the owner’s proprietary recipes with 100% precision. This is a role for a perfectionist who takes pride in the "crack" of a croissant, the fluff of a loaf, and the visual beauty of every dessert that leaves the kitchen.

Key Responsibilities

  • Production Excellence: Oversee daily production of all breads, pastries, and signature desserts.
  • Recipe Fidelity: Follow the "Recipe Bible" exactly. No deviations are allowed without approval; consistency is our highest priority.
  • Section Leadership: Manage and train junior Commis Chefs, ensuring they maintain your high standards of prep and cleanliness.
  • Mise en Place: Ensure all stations are fully prepped and ready for the morning rush and the busy evening "Ritual" service.
  • Quality Control: Inspect every item for taste, texture, and appearance before it is sent to the cafe floor.
  • Food Safety: Maintain impeccable HACCP standards and ensure the bakery section is always "Municipality-ready."

What We Are Looking For

  • Experience: 3–5 years in a professional bakery or a high-end cafe kitchen (UAE experience is preferred).
  • Skills: Expert knowledge of dough fermentation, lamination techniques, and temperature control.
  • Discipline: A strong "military-style" approach to cleanliness and organization.
  • Creativity: While you follow set recipes, you should have an eye for elegant plating and modern garnish techniques.
  • Language: Good communication in English to coordinate with the front-of-house team.
