Chef de Partie Pastry

KEY RESPONSIBILITIES

  • Maintain the highest possible hygiene and maintenance standards. Ensure the highest degree in applied hygiene and food safety as per the ADFCA, HACCP guidelines to ensure that all bakery products served to the Guests are of the highest quality and standard
  • Ensure that all bakery dishes leaving the Kitchen are of appropriate portion and presented as per recipes and presentation standards set by the Pastry Chef
  • Create high quality and standard bakery products to satisfy the Guests needs
  • Work in close cooperation with all other key departments in the hotel to ensure a smooth operation
  • Control the food cost by preparing / reviewing all store requisitions and direct purchases and ensure the accurate delivery of goods in order to achieve the budgeted profitability
  • Attend required meetings and conduct daily briefings with your team members ensuring efficient communication, to run the bakery operation smoothly
  • Train all the team members under direct supervision in order to produce very high standard of bakery products (set by the Pastry Chef) in the Kitchen

  • Give clear, conceive directions, provide support and supervise your staff to ensure that directions are properly executed.

  • Have a deep understanding of the hotel’s operational strategies to meet business needs.

Human Resources

  • Ensure that the hotels are fully compliant with Wyndham people processes and deadlines that govern all Wyndham properties. E.g. AES, Success Matters, Probation reviews etc.
  • Assists the Pastry Chef in the administration of the probation review process in the operational departments and ensure that follow-up for all issues is done in timely manner and results of both follow-up and the initial reviews are communicated to all relevant parties.
  • Talent Reviews taken place as per the communicated timeline and are live in the business.
  • Ensure 100% compliance with all mandatory training for departments; as well as the Departmental Trainers are positively encouraged.
  • Assists the Pastry Chef in controlling the Labor turn over, Absence and Payroll in your department in conjunction with the HR Leader on property to ensure that any areas of concern.
  • Manage the annual associate survey process in your department with the Pastry Chef and ensure that the follow up meetings are done and the associates have timely feedback.
  • Support WYN.com with quarterly People, Community and Sustainability engagement events

Communication

  • Communicate effectively within the organization at all levels using the most appropriate communication method for the matter concerned.
  • Conduct regular brief, concise, well prepared meetings and ensure follow-up.
  • Communicate with Guest and be visible in the local community as a representative of the hotel.

Experience Needed

  • A minimum of 2 years working as a Chef de Partie in a branded hotel
  • Proficiency computer literacy.
  • Certificate or Diploma in a hospitality field or business administration.
