Tandoor & Cooking Operations
- Prepare and cook all tandoor items including kebabs, breads, grills, and specialty dishes.
- Manage tandoor temperature and cooking times accurately.
- Prepare marinades, spice mixes, and mise-en-place as per recipes and standards.
- Ensure consistency in taste, texture, and presentation.
Kitchen & Food Safety
- Maintain strict hygiene and sanitation practices in the tandoor section.
- Follow HACCP and food safety standards at all times.
- Ensure proper storage, labelling, and rotation of food items (FIFO).
Operational Support
- Support the Chef de Partie/Sous Chef in menu planning and new dish trials.
- Assist with daily stock requisition and minimise wastage.
- Keep equipment clean, safe, and in good working condition.
Teamwork & Coordination
- Coordinate with other sections to ensure smooth kitchen operations.
- Train and guide junior staff when required.
- Communicate effectively to ensure timely service during operations.
Skills & Requirements
- Proven experience in tandoor or North Indian specialty cooking.
- Strong knowledge of marination techniques, Indian spices, and traditional recipes.
- Good understanding of kitchen operations and food safety.
- Ability to work under pressure during peak hours.
- Positive attitude, discipline, and a passion for cooking.
Qualifications
- Diploma/Certificate in Culinary Arts or equivalent.
- Minimum 2–3 years of experience in a tandoor section (preferably in a five hotel or resort).
