Commis - Pastry

Based at the Mandarin Oriental Downtown, Dubai within the Pastry section in Dubai, the Commis will assist in the preparation and presentation of high-quality pastries, ensuring consistency, precision, and attention to detail. This role supports timely production while maintaining exceptional standards of hygiene, quality, and presentation in line with the hotel s culinary excellence. The Commis reports to Chef de Partie.

As a Commis, you will be responsible for the following duties:

• Assist in the preparation of a wide variety of pastries, breads, and other baked goods, ensuring adherence to established recipes and presentation standards.

• Maintain consistency, quality, and portion control in all pastry production to meet luxury brand expectations.

• Support the Pastry Chef and Demi Chef de Partie in daily operations, including mise en place, station setup, and timely execution during service periods.

• Ensure proper storage and labelling of all ingredients and finished products to maintain freshness and comply with food safety standards.

• Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.
