Position Overview
The Commis Prep Chef supports the kitchen team by preparing ingredients, maintaining hygiene standards, and assisting in the cooking of authentic Chinese dishes. This role is ideal for someone passionate about Asian cuisine, eager to learn traditional techniques, and able to work efficiently in a fast-paced environment.
Key Responsibilities
- Ingredient preparation: Wash, cut, and portion vegetables, meats, and seafood for wok, dim sum, and stir-fry dishes.
- Sauce and marinade prep: Assist in preparing base sauces, stocks, and marinades used in Chinese cooking.
- Support cooking stations: Provide mise en place for wok, steamer, and fryer sections.
- Maintain hygiene: Follow food safety standards, ensure cleanliness of prep areas, and comply with HACCP guidelines.
- Assist senior chefs: Support Demi Chef de Partie and Chef de Partie in daily operations.
- Stock management: Monitor ingredient levels, report shortages, and assist in proper storage.
Skills & Competencies
- Knowledge of Chinese cooking techniques (wok handling, steaming, stir-frying).
- Ability to follow recipes and instructions precisely.
- Strong organizational and multitasking skills.
- Team player with good communication skills.
- Basic understanding of food safety and hygiene practices.
