Purpose of the role:

The Commissary Manager is responsible for leading end-to-end commissary operations to ensure safe, efficient, and high-quality production across all facilities. The role focuses on operational excellence, team leadership, food safety and HSE compliance, cost control, and continuous process improvement, while leveraging data and reporting to drive performance, manage risks, and support business growth.


Key Responsibilities:

Operational Oversight:

  • Manage daily operations and delivery across all facilities
  • Ensure production schedules are met efficiently and safely
  • Assure product quality complies with standards

Team Leadership:

  • Hire, train, and supervise staff at the commissary
  • Lead production to comply with standards

Quality Assurance & HSE:

  • Implement and maintain quality control measures and food safety protocols
  • Monitor compliance with food safety regulations and standards
  • Ensure OHSE compliance at the facility

Process Improvement:

  • Lead teams to analyze production processes, identify areas for improvement and implement best practices.
  • Collaborate with teams to optimize workflows and reduce waste


Budget and Cost Control

  • Develop and manage the facility’s budget.
  • Monitor expenses and optimize resource allocation


Reporting and Analysis:

  • Maintain accurate records of production, quality control and safety audits
  • Prepare and present operational reports to upper management on performance metrics
  • Utilize data analysis to make informed decisions and drive improvements


Crisis Management:

  • Develop and implement contingency plans for emergencies or production disruptions


Qualifications

  • University degree in mechanical engineering, food technology, process engineering, operation management, or similar
  • Mandatory minimum 5+ years of experience in food production; preferability with poultry production / vegetable / salad production; at least 3 years in a managerial role.
  • Proficiency in quality control, managing budget, and production costing
  • Advantage with GFSI or related lead auditor experience
  • Starting up of new facility and factory experience
  • Strong problem-solving and analytical abilities
  • Exceptional communication and interpersonal skills toward managing the team and stakeholders from other departments
