We’re Hiring: Cost Controller / Cost Manager – Group F&B Operations
Location: Dubai, UAE | Full-Time | Multi-Brand F&B Group
We are a dynamic and expanding multi-brand F&B group based in Dubai, operating across dine-in restaurants, cafés, cloud kitchens, and a high-capacity central production facility. We are currently seeking an experienced and results-driven Cost Controller / Cost Manager to lead cost optimization across all entities.
This role is critical to our growth strategy and requires deep restaurant industry knowledge, strategic cost control, and data-driven decision making.
Key Responsibilities:
Cost Management Across Group Operations
Monitor, analyze, and control food and beverage costs across all brands and entities.
Oversee production kitchen, central kitchen, and outlet-level inventory and cost variances.
Ensure portion control, wastage tracking, and raw material utilization are in strict compliance.
Analyze supplier pricing, support procurement strategies, and implement cost-saving initiatives.
Menu Engineering & Profitability Optimization
Collaborate with culinary and finance teams to conduct menu engineering and recipe cost analysis.
Maintain and monitor standard recipes and theoretical costing.
Reporting & ERP System Oversight
Lead the development of cost reports, variance analysis, and cost dashboards for leadership.
Ensure real-time data accuracy across all units for purchases, stock levels, and production yields.
Operational Controls & SOP Implementation
Design and enforce SOPs for inventory control, supplier tracking, and kitchen-level accountability.
Conduct regular audits of kitchens and storage to ensure compliance with financial controls.
KPI Monitoring & Strategic Impact
Define and monitor key operational KPIs across all brands and business units.
Present actionable insights to senior leadership for performance improvement.
Drive initiatives to enhance food cost percentage, reduce wastage, and improve efficiency.
What We're Looking For:
Minimum 5 years of relevant experience in cost control or finance management within the restaurant/F&B sector.
Strong expertise in central kitchen operations, procurement controls, and menu costing.
Excellent command of Excel, ERP systems, and costing software.
Experience working under pressure and managing multi-entity, high-volume operations.
Excellent communication and reporting skills.
